Basic Tomato Sauce (This take an hour)

I make lots of this every weekend to so I have sauce ready for a quick pasta meal if I’m in a hurry during the week.

4 tins of tomatoes chopped - are easiest - but if you use whole tomatoes pour them into a bowl and squash and squeeze them with your hands or chop them up.
4 pieces of fresh garlic not garlic salt.
Olive oil or other oil
Fresh basil or dried oregano
Salt and Pepper

Cover the bottom of your medium saucepan with olive oil.  

Open the tins of tomatoes.

Skin the garlic and chop it finely until it resembles bread crumbs then add it to the olive oil and heat it gently for two minutes.  

Add the tomatoes and turn up the heat and when it starts to bubble turn it down and let it cook for about 45 minutes.

Turn the heat off and add the basil or oregano, salt and pepper and then blend it so that you have a smooth sauce without lumps.

Let it cool down and spoon it into the clean jam jars or containers.  Store it in the fridge and use it within a week.
